It sounds like you will be there during spring break, which will make it difficult. You could probably do the highlights at both parks, skip the shows and the minor rides. If you got to Islands when it opened and went straight to Hulk, Spiderman, Dueling Dragons, Jurassic Park, and then went over to Universal. Then at Universal, go to the Mummy, the Simpsons, and whatever else interests you. Day of the week doesn't matter as much as time of year - if the U.S. kids are on spring break, the parks will be packed. And spring break in the U.S. is different everywhere.
